1. The relationship is linear. The initial rate increases as the substrate concentration increases. With more substrates, there will be a more of the reaction occurring, as there is more to be used up. The importance of temperature regulating mechanisms in organisms prevents enzymes from denaturing.
2. 1.0 g. and 4.0 g. of lactose is the most reactant to a pH of 7.
3. Because at low substrate concentration (lactose) the enzyme does not have all of the active sites saturated and forming enzyme-substrate complexes.
